SATE UDANG


BAHAN :

  • 400 gr Udang Besar
  • 6 buah Cabai Merah
  • 4 buah Kemiri
  • 1/2 sdt Kencur
  • 1 sdt Kunyit
  • 1 sdt Bawang Putih Goreng
  • 1 sdt Air Jeruk Sambal
  • 1 sdm Gula Pasir
  • Garam dan tusuk sate secukupnya

CARA MEMBUAT :

  1. Bersihkan udang dan kupas kulitnya (ini alasannya kenapa harus pakai udang yang besar, kalo dikupas kulitnya biar masih kelihatan besar)
  2. Semua bumbu dihaluskan, campur dengan udang.
  3. Udang berbumbu ditusuk lalu dipanggang.
  4. Hati-hati dalam memanggang jangan sampai GOSONG nanti pahit, dan yang penting jangan sampai kena tangan, Sakit.

SATE LILIT AYAM


Bahan:

  • 250 gram daging ayam cincang
  • 1 sdt merica tumbuk kasar
  • garam secukupnya
  • gula secukupnya
  • 1 butir telur ayam
  • seperempat butir kelapa parut muda
  • 5 buah cabai rawit merah iris halus
  • 3 lembar daun jeruk parut iris halus
  • 15 batang serai, bersihkan, iris sedikit ujungnya
  • 1 sdm tepung tapioka
  • 1 sdm minyak kelapa untuk mengoles

Bumbu yang dihaluskan:

  • 6 siung bawang merah
  • 2 siung bawang putih
  • 1 cm kencur
  • 1 cm jahe
  • 1 cm lengkuas
  • setengah sdt terasi bakar
  • setengah sdt merica bulat
  • setengah sdt ketumbar
  • setengah sdt jintan

Cara Membuat:

  • Campur daging ayam bersama bumbu halus, merica, garam, gula dan telur.
  • Remas-remas hingga adonan menjadi kalis.
  • Tambahkan kelapa parut, cabai dan daun jeruk purut. Aduk kembali.
  • Siapkan batang serai.Lumuri sebagian bonggolnya dengan tepung tapioka.
  • Beri 1 sdm adonan ayam dan ratakan sambil dibentuk menjadi bulatan lonjong seperti pentul.
  • Kerjakan hal yang sama hingga adonan habis. Siapkan bara api.
  • Bakar sate lilit sambil sesekali dibalik bila salah satu sisinya sudah matang dan berwarna kecokelatan.
  • Oles dengan sedikit minyak.
  • Rapikan sate dengan memotong batang serai bagian atasnya.
  • Sajikan panas dengan sambal matah, lawar sayur dan nasi pulen panas.

CHICKEN WING SATAY


Bahan :

  • 10 buah sayap ayam, buang bagian ujungnya
  • 10 buah tusuk sate, rendam air agar tidak hangus ketika dipanggang

Bumbu Perendam :

  • 1 sdm olive oil
  • 3 sdm kecap manis
  • 2 siung bawang putih, haluskan
  • 1/4 buah bawang bombay, iris halus
  • 1/2 sdt ketumbar bubuk
  • 1/2 sdt merica bubuk
  • 1 sdt garam
  • 1 sdt red pepper powder/chili powder - kalo mau rasanya pedes

Cara Membuat :

  • Lumuri sayap ayam dengan bumbu perendam dan simpan dalam kulkas selama 2-3 jam agar bumbu meresap.
  • Tusuk masing-masing 2 potong sayap ayam dengan 2 buah tusuk sate.
  • Bakar dalam oven selama 30 menit sambil sesekali dibalik agar matang kedua sisinya. Angkat dan sajikan dengan sambal kecap.

SATE LILIT IKAN


Bahan

· 500 gram ikan tenggiri dicincang
· 2 lembar daun jeruk diiris halus
· 2 sendok makan santan kental
. 1 butir jeruk limo


Bumbu dihaluskan:

· 2 siung bawang putih
· 3 buah cabe merah
· 1/2 sendok the merica putih bubuk
· 10 biji merica hitam
· 1/2 sendok teh terasi
· gula merah secukupnya
· garam secukupnya


Cara membuat:

· Campur ikan dengan bumbu yang sudah dihaluskan, daun jeruk, santan kental dan air perasan jeruk limo.
· Bagi menjadi + 25 bagian. Masing-masing bagian dilekatkan pada tusuk sate khusus berbentuk tangkai segiempat panjang sampai melekat dengan baik.
· Panggang diatas bara api/panggangan listrik sambil sesekali dibalik.
Untuk + 25 sate.




SATE BUNTEL


Bahan

· 750 gr daging kambing cincang
· air jeruk nipis/lemon secukupnya
· 4 lembar daun jeruk diiris halus
· 250 gr lemak kambing tipis, potong kotak 4x5cm


Bumbu dihaluskan:

· 8 bawang merah
· 2 bawang putih
· 5 kemiri disangrai
· 3 cabe merah tanpa biji
· 1 sendok teh jintan disangrai
· 1 sendok makan merica disangrai
· 1 sendok makan ketumbar
· garam secukupnya
· gula merah secukupnya


Cara membuat :

· Campur daging cincang dengan air jeruk nipis, daun jeruk cinang, dan bumbu halus hingga rata. Bagi menjadi 15 bagian sama besar.
· Bentuk adonan lonjong memanjang dan bungkus masing-masing dengan lemak, lalu tusuk dengan tusukan sate.
Tata di atas loyang yang sudah diolesi minyak, panggang dalam oven selama sekitar 40 menit atau sampai matang sambil sesekali dibalik.




SATE BALI

Bahan

· 500 gr daging sapi has dalam, potong dadu
· 3 sendok makan minyak
· air asam secukupnya


Bumbu dihaluskan:

· 8 bawang merah
· 2 siung bawang putih
· 6 kemiri disangrai
· 5 cabe merah
· jahe secukupnya
· kunyit secukupnya
· 1 sendok teh ketumbar
· terasi sesuai selera
· garam secukupnya
· gula merah secukupnya


Cara membuat :

Campur daging dengan minyak, air asam, dan bumbu halus. Diamkan 15 menit, tusukkan pada tusuk sate.
Panggang diatas bara api/panggangan kompor/oven grill sambil sesekali dibalik dan diolesi bumbu .




SATE AYAM MADURA

Bahan:

250 g fillet ayam, potong dadu, tusuk dengan tusukan sate
1 buah jeruk nipis, iris
3 butir bawang merah, iris tipis
5 sdm kecap manis
nasi putih atau lontong secukupnya

Bumbu Kacang:
3 butir bawang merah
4 butir bawang putih
100 g kacang tanah, goreng
2 butir kemiri
garam secukupnya
150 ml air kaldu
2 sdm minyak goreng

Sambal Bawang:
4 siung bawang putih
10 buah cabe merah kecil
garam secukupnya
minyak goreng secukupnya

Cara Membuat

  • Bumbu Kacang: campur bawang putih, bawang merah, kacang tanah, garam, dan kemiri, haluskan. Panaskan minyak, tumis hingga harum, masukkan air kaldu, masak hingga mengental. Angkat.
  • Campurkan 2 sdm bumbu kacang dengan 2 sdm kecap manis, celupkan sate, bakar hingga setengah matang. Angkat dan gulingkan kembali dalam bumbu, bakar hingga matang, angkat.
  • Sambal bawang: panaskan minyak, tumis bawang putih hingga setengah matang, angkat. Campur bawang putih, cabe merah kecil, dan garam, haluskan.
  • Sajikan sate ayam dengan bumbu kacang, kecap manis, bawang merah, sambal bawang, jeruk nipis, dan nasi putih atau lontong.

Untuk: 2 porsi



SATE KERANG

Bahan:

500 gr daging kerang darah, cuci bersih
5 sdm kecap manis
2 cm lengkuas, memarkan
2 cm jahe, memarkan
2 btg serai, memarkan
4 lbr daun salam
4 lbr daun jeruk, robek-robek
2 sdm asam, larutkan dalam 2 sdm air
400 ml air
1 sdt garam
Minyak untuk menggoreng
Tusuk sate

Bumbu halus:
3 siung bawang putih
7 bh bawang merah
8 bh cabai merah

Cara membuat:
1. Panaskan minyak, tumis bumbu halus bersama lengkuas, jahe, serai, daun salam dan daun jeruk, aduk, masak sampai harum. Masukkan kecap manis, air asam, dan garam, aduk rata.
2. Masukkan kerang, aduk rata dengan bumbu, tuang air, masak hingga bumbu mengental, angkat.
3. Tusuk 5-6 buah kerang di tusuk sate, lakukan hingga kerang habis.
4. Panaskan minyak, goreng sate sebentar, angkat, tiriskan.
5. Sajikan sate kerang dengan sisa bumbu.

SATE ABING

Bahan:

500 gr daging ayam, rebus, suwir kasar
5 sdm kelapa parut, sangrai, tumbuk halus
350 ml santan encer
1/2 sdt gula pasir
1/2 sdt garam
1/2 sdt air asam
2 sdm minyak untuk menumis

Haluskan:
5 bh cabai merah
3 bh bawang merah
1 sdt ketumbar sangrai
1 sdt jintan sangrai
1 cm jahe
2 cm lengkuas

Cara membuat:
1. Tumis bumbu yang dihaluskan sampai harum, masukkan ayam, aduk sampai ayam berubah warna dan setengah matang.
2. Masukkan kelapa tumbuk, gula, garam, dan asam, aduk rata, masukkan santan.
3. Masak sampai matang dan kuah mengental.

Untuk 4 porsi

SATE BUAH

Bahan :
  • water melon
  • rock melon (cantaloupe)
  • grapes
  • cocktail bamboo skewer

Cara Membuat :

  • Dengan bantuan sendok cocktail, sendoki buah menjadi bulatan-bulatan. Tusuk dengan bamboo skewer khusus cocktail. Hidangkan.



SATE SOSIS


Bahan :

  • 10 buah sosis ayam, masing-masing belah 2 memanjang
  • 20 buah tusuk sate, rendam dengan air agar tidak hangus waktu dibakar

Bumbu Oles, aduk rata :

  • mentega leleh
  • kecap manis
  • saus tomat

Cara Membuat :

  • Tusuk sosis dengan tusuk sate secara memanjang.
  • Bakar di atas bara arang sambil sesekali dioles dengan bumbu oles'nya.
  • Sajikan.




SATE KAMBING


Bahan :

  • daging kambing, potong dadu
  • tusuk sate, rendam air agar tidak hangus waktu dibakar

Bumbu Perendam, aduk rata :

  • mentega cair
  • kecap manis
  • bawang putih bubuk
  • ketumbar bubuk
  • irisan bawang bombay
  • jus nanas

Cara Membuat :

  • Rendam potongan daging kambing dalam bumbu perendam.
  • Simpan dalam kulkas minimal 3 jam agar bumbu meresap.
  • Tusuki potongan daging dengan tusuk sate, lalu bakar di atas bara arang hingga matang.- Sajikan dengan sambal kecap.

SATE AYAM

SATE AYAM AYAM


Bahan:
  • 2 buah dada ayam
  • 1 sdm minyak goreng
  • tusuk sate

Bumbu yang dihaluskan:

  • 5 butir bawang merah
  • 2 siung bawang putih
  • 1 sdt ketumbar
  • 2 cm kunyit
  • 1 sdt asem jawa
  • garam secukupnya
  • gula jawa secukupnya

Cara Membuat Sate:
  • Pisahkan daging dada ayam dari tulangnya.
  • Potong daging ayam sesuai selera. Biasanya 1x2x2 cm.
  • Aduk potongan ayam dengan minyak goreng dan bumbu yang sudah dihaluskan lalu diamkan selama 15-30 menit supaya bumbu meresap.
  • Kemudian, tusukan 3-4 potong daging ayam pada setiap tusukan sate.
  • Panggang sate di atas bara api sampai sate matang, jangan lupa sate perlu dibolak-balik waktu memanggang.
  • Sate siap dihidangkan dengan membubuhkan Sambal sate diatasnya lalu taburkan irisan bawang merah di atas Sambal sate.
  • Sate paling enak kalu dimakan sewaktu masih panas.

DELICIOUS SPAGHETTI

Lasagna with Speck and Pears




Lasagna is an extraordinarily variable dish. This particular version, with speck and pears, is modern, and will (if you halve the recipe) be perfect for romantic occasions too, especially Valentine's Day. The full recipe, to serve 4:


INGREDIENTS:
1/2 pound (220 g) fresh pasta, in sheets (store-bought will be fine)
4/5 cup (200 ml) béchamel sauce (see link to instructions; store bought will be fine too)
1/4 pound (100 g) speck in fairly thin slices (see note)
2 Williams pears, peeled, cored and sliced thinly
1/4 pound (100 g) mozzarella
1/4 cup (50 g) unsalted butter
A healthy pinch of cayenne pepper
Salt to taste


PREPARATION:
Begin by setting a pot of water to boil and heating your oven to 360 F (180 C). Lightly salt the water, separate the sheets of pasta, and cook them for three minutes. Remove them with a strainer and lay them flat on a clean cloth (not overlapping or the sheets will stick).Butter a baking dish proportionate to the volume of ingredients, or more than one if you are making individual portions.

Lasagna with Salmon and Robiola Cheese





INGREDIENTS:
10 ounces (250 g) sheets fresh lasagna
1 pound (450 g) fresh salmon fillet, finely sliced
1/4 pound (100 g) smoked salmon
1 pound (450 g) robiola or similar mild soft spreadable cheese (see note)
2 cups (500 ml) whole milk
1/4 cup freshaly grated Grana Padano or Parmigiano Reggiano
1/4 cup dried breadcrumbs
2 tablespoons (30 g) unsalted butter
2 teaspoons fresh marjoram, minced, or 1/2 teaspoon dried marjoram
Salt and pepper, ideally pink (similar to black pepper, but the peppercorns are pink)




PREPARATION:
To begin with, Robiola is a mild, slightly tart spreadable cow's milk cheese from the north. In its absence I would combine cream cheese and ricotta.Returning to the recipe, chop the smoked salmon and combine it with the robiola, a teaspoon of ground pepper, half the marjoram, the milk, and salt to taste.

Mix well.Preheat your oven to 400 F (200 C).Grease a 9 by 11 inch (20 by 25 cm) baking dish and fill it, starting with a layer of lasagna, followed by a layer of the creamy mixture and one of the fresh salmon. Continue alternating layers until all is used up, closing with a creamy layer.Mix the breadcrumbs with the grated cheese, another half teaspoon pepper, and the remaining marjoram. Sprinkle the mixture evenly over the lasagna. Cover the lasagna with a sheet of aluminum foil and bake it for 15 minutes. Remove the sheet and bake it another 5-7 minutes, and serve at once. A wine? White, and I might go with a Sauvignon Blanc from Friuli Venezia Giulia's Collio.






Vegetarian Lasagna




INGREDIENTS:
10 ounces (250 g) fresh lasagna
10 ounces (250 g) cherry tomatoes, sliced
1 1/2 pounds (700 g) round eggplants
2/3 pound (300 g) robiola (a mild slightly runny soft creamy cheese)
4 tablespoons milk
1/4 pound (100 g) baby spinach leaves
1 cup (50 g) freshly grated Parmigiano
A small bunch of chives, chopped
6 tablespoons olive oil
Salt and pepper to taste




PREPARATION:
Trim the ends of the eggplants, slice them into quarter-inch (half cm) slices, put them in a colander, and sprinkle them with salt. Let them rest for about an hour, rinse them, pat them dry, and grill them on a lightly oiled cast iron griddle for a couple of minutes per side, seasoning them with salt and pepper as they come off the griddle. Slice the tomatoes and wash the spinach. Put the robiola in a bowl, work the milk into it, and then add the chopped chives.

While you are doing this, bring pasta water to a boil, lightly salt it, add a drop of oil to it, and cook the lasagna, a few sheets at a time; remove them with a slotted spoon when they are al dente and put them on a clean cloth to cool. Lightly oil an oven ish large enough to contain the ingredients and lay down a layer of lasagna, followed by a little of the robiola mixture, evenly distributed, and then eggplant, tomatoes, grated cheese, and a drizzl of olive oil. Repeat the sequence until all is used up, drizzle the last of the oil over the top, and bake in a preheated 400 F (200 C) oven for about 15 minutes. Serve at once. The wine? White, and I might go with a Vernaccia di San Gimignano, and more specifically Montenidoli’s Vernaccia Fiore.



Spaghetti Della Carne Di Cervo



Ingredients
1 lb ground venison
1 lb ground chuck
1 1/2 cups chopped onions

2 stalks celery, finely chopped
3 garlic cloves
, smashed then chopped
2 carrots
, peeled finely chopped
2 (28 ounce) cans crushed tomatoes

1 lb white mushrooms, washed sliced
1 (15 ounce) can petitie diced tomatoes

1 (15 ounce) can tomato sauce
1 tablespoon dried basil
1/2 teaspoon oregano
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 cup merlot (optional)
to taste olive oil
(evoo)


Directions
Sauté onions, celery and garlic in very large pot in 2 tablespoons olive oil until almost translucent.
Add meats, carrots and begin to cook until meat is done.
Add all remaining ingredients: canned tomatoes and sauce and mushrooms and spices, Worcestershire and wine.
Simmer for a few hours--the longer the better stirring occasionally.
Serve over favorite pasta with some garlic bread.



Eggplant and Spaghetti Timballo




INGREDIENTS:
2 large eggplant
14 ounces (350 g) spaghetti
A 1-pound can (400 g) of tomatoes
6 ounces (150 g) salted ricotta, shredded (Salted ricotta is firm, and should be available in a well stocked delicatesse
If it is not, use pecorini romano
2 cloves garlic, crushed
20 basil leaves
1/4 cup olive oil
Salt



PREPARATION:
Wash the eggplant and cut them lengthwise into half-inch slices. Put the slices in a colander, salting each layer, and set the colander in the sink for an hour to allow the salt to draw the juices from the eggplant. Sauté the garlic in 3 tablespoons of oil until it begins to turn golden, then remove and discard it.

Crumble the tomatoes into the pan and cook over a brisk flame for 15 minutes, mixing often. Turn off the flame and let the sauce cool. Pat the slices of eggplant dry and broil them, turning them so both sides are golden. Cook the pasta in abundant salted water until it reaches the firm al dente stage, and drain it. Combine it with the tomato sauce and 4 ounces of the grated ricotta and set it aside. Preheat your oven to 360 f (180 C). Take a round 8-inch (18-20 cm) high-sided pie plate, line it with oven paper, and then arrange the eggplant slices to cover the bottom and come up over the sides. Fill the eggplant "crust" with the pasta, fold the eggplant slices over the top of the pie, and use the remaining slices to form a top crust. Press down firmly with your finger tips to level the surface of the pie, drizzle the remaining oil over it, and bake the pie for 20 minutes. Let the timballo cool, cover the top with aluminum foil, and keep it at room temperature until you plan to serve it (don't make it too far ahead). Turn it out onto a serving dish, and slice it, sprinkling the remaining shredded ricotta over it.


MAKE OWN DELICIOUS CAKE

A cake, whether a complicated layer cake or a quick sheet cake or cupcakes made from a mix, is a perfect end to almost any meal, and these quick and delicious recipes will help you make cakes often.




Chocolate Cake

This fabulous cake recipe is very simple to make. A dark chocolate cake is frosted with a lighter cocoa frosting.
Prep Time: 25 minutes
Cook Time: 35 minutes










Ingredients:
1-3/4 cups flour
2 cups sugar
3/4 cup cocoa
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
1/4 tsp. salt
2 eggs
1 cup whole milk
1/2 cup oil
2 tsp. vanilla
1 cup boiling water



Preparation:
Preheat oven to 350 degrees F. Grease and dust with cocoa two 9" layer cake pans. Set aside.
In large bowl, combine sugar, flour, cocoa, baking powder, baking soda, and salt. Stir with wire whisk until blended. Add eggs, milk, oil, and vanilla and beat well with wire whisk or mixer until combined, about 2 minutes. While beating, heat water in microwave oven to boiling. Stir boiling water into cake batter.
Pour the thin batter into the two prepared pans. Bake at 350 degrees F for 30-35 minutes or until cake pulls away from sides of pan, top springs back when lightly touched, and a toothpick inserted in center comes out clean. Cool 5 minutes, then remove from pans and cool completely on wire racks. Fill and frost with Chocolate Frosting.




Molten Chocolate Cakes


Prep Time: 20 minutes
Cook Time: 12 minutes






Ingredients:
1/2 cup semisweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup butter (NOT margarine)
3 eggs
3 egg yolks
1 (14 to 16 oz.) package fudge brownie mix
2 Tbsp. brewed coffee or chocolate milk
2 Tbsp. powdered sugar



Preparation:
Preheat oven to 400 degrees. Grease 12 nonstick muffin cups and set aside. In a medium microwave-safe bowl, combine both kinds of chocolate chips and butter. Microwave on high power for 1 minute, stirring twice during cooking, or until chocolate and butter are melted and mixture is smooth. Cool for 5 minutes.
In a large bowl, combine eggs and egg yolks and beat at high speed for 5 minutes until foamy, light in color, and doubled in size.
If there is one, set aside the chocolate syrup packet from brownie mix. Gradually add the dry brownie mix to the beaten egg mixture, stirring with wooden spoon until well blended. Fold in melted chocolate mixture and coffee or chocolate milk. Carefully pour batter into prepared muffin cups.
Bake at 400 degrees for 10 to 14 minutes or just until edges are set. The centers of the little cakes will still be soft. Cool on wire rack for 2 minutes. Run knife around edge of each cake to loosen, then invert warm cake on each plate. Drizzle with the chocolate syrup from the reserved packet and sprinkle with powdered sugar. 12 servings




Chocolate Cherry Cake

Prep Time: 20 minutes
Cook Time: 30 minutes







Ingredients:
1 (18-ounce) package devil's food or chocolate cake mix
1 (21-ounce) can cherry pie filling
1 teaspoon almond extract
2 eggs
1 cup sugar
7 tablespoons butter
1/3 cup whole milk
1 (12-ounce) package semisweet chocolate chips
1 teaspoon vanilla



Preparation:
Preheat oven to 350 degrees F. Spray a 13x9" pan with nonstick baking spray containing flour and set aside. In large bowl, combine cake mix, cherry pie filling, extract, and eggs. Beat until well mixed, then beat 1 minute at medium speed. Pour into prepared pan. Bake at 350 degrees F for 25-30 minutes or until cake is set.
While cake is in the oven, combine sugar, butter, and milk in large saucepan. Bring to a boil, then boil for 1 minute, stirring constantly. Remove from heat and add chocolate chips and vanilla. Stir with a wire whisk until the chips are melted and frosting is smooth. Pour over warm cake and spread to cover. Let cool on wire rack before serving. 16 servings.




Chocolate Oatmeal Cake


This simple cake, made with oatmeal, chocolate chips, and coconut, is great for lunchboxes or a family dinner. It's very similar to German Chocolate Cake, but with more chocolate! And the cake is very easy to make because you don't have to cream butter and sugar together, and the topping is simply stirred together and spooned on the cake.
Prep Time: 15 minutes. Cook Time: 35 minutes




Ingredients:
1 cup quick cooking oatmeal
1/2 cup butter, cut into pieces
1 cup semisweet chocolate chips
1-1/2 cups boiling water
1/4 cup cocoa
3/4 cup sugar
1 cup brown sugar
2 eggs
2 tsp. vanilla
1-3/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/3 cup butter, melted
1/2 cup chopped walnuts
1/4 cup sugar
1/2 cup brown sugar
1 cup flaked coconut
1/4 cup plus 1 Tbsp. heavy cream
1 tsp. vanilla
1 cup semisweet chocolate chips



Preparation:
Preheat oven to 350 degrees F. Grease a 9x13" pan and set aside. In a large bowl, combine oatmeal with 1/2 cup butter and 1 cup chocolate chips. Pour boiling water over all, and let stand for 5 minutes. Then add the cocoa and mix well with a wire whick so the chocolate and butter melt. Add 3/4 cup sugar and 1 cup brown sugar and whisk to combine. Set aside to cool for 10 minutes.
Add eggs and 2 tsp. vanilla and beat until combined. Then add flour, baking soda, and salt. Mix with a wire whisk until well blended. Immediately pour batter into prepared pan.
Bake at 350 degrees F for 25-35 minutes until cake pulls away from sides of pan and springs back when lightly touched in center.
Prepare topping while cake is baking. Combine 1/3 cup melted butter, walnuts, 1/4 cup sugar, 1/2 cup brown sugar, coconut, cream, and 1 tsp. vanilla in a medium bowl; mix well. When cake tests done, remove from oven and set on wire rack.
Turn oven to broil. Drop topping mixture by small spoonfuls onto cake; spread very gently to cover. Place under broiler, 4" from heat source, and broil for 2-5 minutes until topping is bubbly and light golden brown. Watch this every single second, turning the cake from front to back so the frosting cooks evenly. It can burn in a couple of seconds, so keep watching! When the frosting is bubbling furiously all over the cake and is beginning to brown in spots, remove cake from oven and sprinkle with 1 cup chocolate chips. Let stand for 10 minutes, then carefully swirl the chocolate chips into the frosting with the tip of a knife. Cool and cut into squares. Serve warm or cool. Serves 12



Triple Delight Chocolate Cake


This delicious layer cake is one I've always wanted to try; it starts with a frosting. That's right, chocolate frosting is used to bake the cake! I changed the recipe significantly. The original recipe was peppermint flavored, and I wanted a pure chocolate cake. I increased the amount of cream cheese and powdered sugar too. Also, I tripled the amount of chocolate in the cake to give it more flavor. I'm very happy with the result; you will be too!
Prep Time: 35 minutes
Cook Time: 35 minutes




Ingredients:
8 oz. pkg. cream cheese, softened
1/2 cup butter, softened
1 tsp. vanilla
8 cups powdered sugar
1/3 cup hot water
12 oz. semisweet chocolate, melted
1/4 cup butter, softened
2 cups reserved frosting
3 eggs
2 cups flour
1-1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup milk



Preparation:
Preheat oven to 350 degrees F. Grease 2 9" layer cake pans and dust with cocoa powder; set aside. In a large bowl, combine cream cheese and butter and beat with mixer until light and fluffy. Add vanilla and 2 cups of powdered sugar and beat well. Add 1/3 of the hot water and beat. Repeat, adding sugar and water alternately. Then beat in melted chocolate. Measure 2 cups of this frosting for the cake batter. Cover the rest of the frosting tightly with foil and set aside.
For cake, in another large bowl, combine 1/4 cup butter with 2 cups reserved frosting and beat well. Add eggs, one at a time, beating well after each addition. Add flour, baking soda, salt, and milk to the batter and beat until smooth and well blended. Pour batter into prepared cake pans. Bake at 350 degrees F for 30-40 minutes until toothpick inserted in center of cake comes out clean. Cool 5 minutes; remove cakes from pans and cool completely on wire racks.
Fill and frost cooled cake layers with set aside frosting. You may need to thin the frosting out a bit with 1-2 Tbsp. of milk for the desired spreading consistency. Store cake in refrigerator. 12 servings






Chocolate Chip Banana Cake




This rich cake is very easy to make, and has a wonderful velvety texture because of the mashed banana.
Prep Time: 20 minutes
Cook Time: 65 minutes





Ingredients:
3 cups flour
2-1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3 ripe bananas, mashed
1 cup butter, softened
1/4 cup cream
1-1/2 cups sugar
4 eggs
1 tsp. vanilla
12-oz. pkg. chocolate chips



Preparation:
Preheat oven to 325 degrees F. Generously grease and flour a 12 cup bundt pan; set aside. In large bowl combine all ingredients except chocolate chips. Beat on medium speed for 2 minutes. By hand, stir in chocolate chips. Pour into prepared pan. Bake at 325 degrees F for 65-75 minutes or until cake is firm and set and begins to pull away from sides of pan.
Immediately set pan onto a dishtowel that has been soaked in water and gently wrung out. Let pan sit for 5 minutes, then turn out onto serving plate (this will make the cake come out of the pan without sticking). Cool completely before serving. 16 servings







Updated Tunnel of Fudge Cake

Prep Time: 25 minutes
Cook Time: 60 minutes




Ingredients:
1-3/4 cups butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 (1-ounce) squares unsweetened chocolate, melted and cooled
6 eggs
2 cups powdered sugar
2-1/4 cups flour
1/2 cup cocoa
2 cups chopped pecans



Preparation:
Preheat oven to 350 degrees F. In large bowl, combine butter, sugar, and brown sugar, and beat until mixture is light and fluffy. Add melted and cooled chocolate, beating until combined.
Add eggs, one at a time, beating throughly after each addition until eggs combine with butter mixture (this can take some time). Gradually add powdered sugar, mixing well. By hand, stir in flour, cocoa, and pecans until well blended.
Spray a 12 cup Bundt pan with nonstick baking spray with flour. Spoon batter into prepared pan. Bake at 350 degrees F for 58-62 minutes, until crust looks dry and shiny (traditional doneness tests won't work because of the soft fudge center). Cool cake in pan on rack for 1 hour, then invert onto serving plate and remove pan. Cool completely. Sprinkle with powdered sugar before serving. Serves 16

Fried Rice ( Resep Nasi Goreng)

Simple Fried Rice

(Nasi Goreng Sederhana)



Ingredients

2 plates white rice

2 cloves galic, finely chopped

5 shallots, finely chopped

2 red chilies, finely chopped

1 tomato, thinly sliced

1 egg, make omelette then thinly sliced

1 spoon sweet soysauce

1 spoon salty soysauce

2 spoons cooking oil

1 teaspoon salt

1 teaspoon pepper

Method:

Saute garlic, shallot and red chilies till nice aroma appears. Add sliced tomato and stir a while. Add rice, both sweet and salty soysauce then mix well. Add salt and pepper, mix well again. Serve together with sliced omelette as topping. It can also be added with fried sliced shallot on the top.

P.S. Fresh tomato can be replaced with 1 spoon tomato sauce or tomato pasta which is added the time when rice and soysauce are added.

Tambahkan garam dan merica bubuk, aduk-aduk lagi sampai rata.
Hidangkan dengan dihiasi irisan telur diatasnya. Dapat juga ditambahkan bawang merah goreng.

N.B.
Buah tomat bisa digantikan dengan 1 sdm saus tomat atau pasta tomat yang ditambahkan ke penggorengan bersamaan dengan nasi dan kecap.

Nasi Goreng Sea Food

(Sea Food Fried Rice)


Bahan-bahan

2 piring nasi
5 siung bawang putih, dirajang halus
25 gr udang
25 gr cumi-cumi
25 gr ikan kakap
1 sendok makan saos tomat
5 sendok makan minyak goreng
1 sendok makan kecap manis
1 sendok makan saos tiram
10 buncis dirajang halus
10 gr bawang pre
1 telur ayam, dikocok
10 gr kacang polong
merica sesuai selera
garam sesuai selera

Cara Membuat

Panaskan minyak goreng, tumis bawang putih dan bawang pre sampai harum, masukkan telur ayam yang dikocok
Masukkan udang, cumi-cumi, dan ikan kakap, masak hingga matang. Tambahkan nasi putih dan buncis, goreng sampai tercampur rata
Tambahkan saos tomat, saus tiram, garam, merica, kecap manis, aduk hingga rata
Tambahkan buncis, kacang polong, aduk hingga nasi goreng matang
Nasi goreng siap dihidangkan dihias dengan irisan tomat, irisan mentimun dan daun sla.

Ingredients

2 plates of cooked rice
5 cloves of garlic
25 grams of shrimp
25 grams of squid
25 grams of flesh of fish
1 spoon of tomato pasta/sauce
5 spoons of frying oil
1 spoons of sweet soya sauce

Method

Fry oil, saute leek and chopped garlic till smell good, add egg and scramble

Add beans and green peas, mix till nasi goreng welldone

2 piring nasi
1 siung bawang putih
3 bawang merah
2 buah cabai merah, dihaluskan
1 sendok makan pasta tomat/saus tomat
1 batang daun bawang
1 butir telur, kocok
100 gram daging ayam, dipotong dadu kecil-kecil
50 gram udang, dikupas
5 bakso
1 sendok makan minyak goreng
2 sdm minyak wijen
merica bubuk sesuai selera
garam sesuai selera

Cara Membuat

Panaskan minyak goreng dan minyak wijen, tumis bawang putih, bawang merah dan cabai merah sampai harum baunya.
Masukkan ayam, udang dan bakso, aduk sebentar sampai agak matang.
Masukkan telur, aduk-aduk hingga telur pecah-pecah matang.
Masukkan nasi putih, saus tomat, garam dan merica, aduk sampai rata dengan bumbu.
Dihidangkan dengan dihias seperlunya.

5 meatballs
1 egg, stirred

Method

Saute garlic, shallot and red chili in hot frying and sesame oil.
Add chicken, shrimp and meatball, stir awhile till softdone.
Add egg, scramble it till done.
Add rice, tomato pasta/sauce, salt and pepper, mix well.
Serve with garnish to taste.




Nasi Goreng Keju Istimewa

(Special Cheese Fried Rice)



Bahan-bahan

500 gr nasi putih
250 gr dada ayam, potong dadu kecil
2 sdm mentega
200 gr keju, potong dadu kecil
4 sdm kacang polong
1/2 sdm kecap manis
1 bawang bombay, cincang halus
1 sdt garam
4 sosis sapi, iris tipis
4 sdm saus tomat
1 sdt kecap beraroma
1 batang wortel, potong dadu kecil rebus matang

Pelengkap

50 gr keju parut
1/2 sdt garam
4 butir telur

Kocok, buat dadar dan iris tipis

Cara Membuat

Panaskan mentega, tumis bawang bombay, cabai merah, wortel, dada ayam dan sosis sapi hingga matang. Masukkan kacang polong, nasi putih, saus tomat, kecap manis, kecap beraroma dan garam. Aduk rata. Hidangkan selagi panas denga dadar keju.

250 gr chicken breast, make small cube slices
200 gr cheese, make small cube slices
1 red chilli, remove the seeds, make thin slices
1 onion, chopped
4 spoons green peas
4 spoons tomato sauce

1/2 spoon sweet soya sauce
1 teaspoon aromatic soya sauce
1 carrot, make small cube slices, boiled well

Method

Melt butter, saute onion, red chilli, chicken breast, beef sausage and carrot till welldone
Add peas, white boiled rice, tomato sauce, sweet soya sauce, aromatic soya sauce and salt. Mix well
Serve while it is still hot garnish with thin slices of cheese omellete
Cheese omellete made by mixing 50 gr parmesan cheese, 1/2 teaspoon salt and 4 eggs


Nasi Goreng Udang

(Shrimp Fried Rice)



Bahan-bahan

500 gr nasi putih
200 gr udang kupas
100 gr kacang polong
100 gr jamur merang, belah dua
3 sdm mentega
1 sdm kecap asin
1 sdm kecap ikan
1 sdm minyak wijen
2 siung bawang putih
2 batang daun bawang, potong-potong
lada halus dan garam secukupnya

Cara Membuat

Panaskan mentega lalu tumis bawang putih hingga wangi.
Masukkan udang, aduk hingga udang berubah warna.
Masukkan daun bawang, kacang polong, jamur merang, kecap ikan, kecap asin dan minyak wijen. Aduk rata, cicipi rasanya. Jika kurang asin tambahkan garam. Masukkan lada halus secukupnya.
Masukkan nasi, aduk hingga rata. Setelah matang angkat lalu hidangkkan.

Ingredients

500 gr boiled/steamed rice
200 gr peeled shrimp
100 gr green peas
100 gr mushroom, cut in half
3 spoons margarine/butter
1 spoons salty soysauce
1 spoons fish soysauce
1 spoons sesame oil
2 cloves garlic
2 leaves green onion, slice small
1 spoon pepper powder
1 spoon salt

Method

Heat butter on the pan then saute garlic till smell good.
Put in shrimp, beat till the color changes.
Add leek, green peas, champignon, fish soysauce, salty soysauce and sesame oil. Mix all of them well
Add boiled rice and mix again well. Taste it. Add some salt if you like salty. Then add pepper powder as your taste. Mix again till weldone. Ready to serve.




Nasi Goreng Sarden

<(Sardine Fried Rice)



Bahan-bahan

3 mangkuk nasi putih
5 sdm minyak goreng
100 gr udang, kupas, biarkan utuh atau dipotong terserah selera
1 kaleng sarden
1 sdm minyak wijen
4 butir telur, kocok sebentar
4 sdm kacang polong
4 buah bawang merah, cincang halus
3 siung bawang putih, cincang halus
6 bh cabe merah, iris-iris halus
1 sdt garam halus
1 sdt lada halus

Cara Membuat

Ambil ikan sarden, goreng sebentar dalam minyak panas dan potong-potong kecil, sisihkan
Tumis bawang merah dan bawang putih dalam minyak panas
Masukkan udang kupas, tumis
Tambahkan saus sarden, tumis
Masukkan nasi, aduk-aduk, kemudian tambahkan garam, lada dan minyak wijen
Tuangkan telur kocok dan aduk hingga rata
Terakhir masukkan cabai, ikan sarden dan kacang polong, aduk-aduk sebentar
Hidangkan selagi panas.


Ingredients

3 bowls of boiled rice
5 spoons cooling oil
100 gr shrimp, peeled
1 can sardine
1 spoon sesame oil
4 eggs, stir awhile
4 spoons green peas
4 shallots, chopped
3 cloves garlic, chopped
6 red chilli, sliced
1 teaspoon salt
1 teaspoon pepper powder

Method

Fry sardine fish awhile in hot cooking oil, put them out of the pan and slice each into pieces then put them aside for awhile
Saute shallot and garlic in hot cooking oil
Add shrimps, stir
Add sardine sauce from the sardine can, stir
Add boiled rice, mix well, then add salt, pepper powder and sesame oil
Add egg and mix well again
Finally add chilli, sardine fish, green peas, then stir awhile
Serve while warm.

Nasi Goreng Saus Tiram

(Oyster Sauce Fried Rice)



Bahan-bahan

2 piring nasi putih
100 gr udang yang cukup besar
5 sdm daging ayam yang dipotong kecil
2 sdm ikan asin yang sudah dihancurkan
2 btr telur dibuat orak-arik
2 sdm minyak
1 sdm mentega
1 sdm saus tomat
4 sdm saus tiram
1/2 siung bawang bombay
3 siung bawang putih
3 sdm kacang polong
3 sdm wortel yang diris-iris kecil
1/2 sdm sambal
1/2 sdt gula

Cara Membuat

Bawang diris halus. Tumis bawang putih dan bawang bombay dalam campuran minyak dan mentega yang panas sampai berbau harum
Masukkan ayam, udang dan aduk-aduk hingga matang
Kemudian masukkan pula nasi, ikan asin, saus tiram, wortel dan kacang polong. Aduk-aduk sampai kering.
Tambahkan saus tomat, sambal dan gula. Aduk-aduk rata.
Tambahkan telur, aduk sebentar.
Bila senang pedas bisa ditambah lagi dengan irisan cabai merah.

2 eggs, made scramble egg
2 spoons cooking oil
1 spoon butter/margarine
1 spoon tomato sauce
4 spoons oyster sauce
1/2 Bombay onion/large yellow onion
3 cloves garlic
3 spoons green peas
3 spoons juliene-cut carrot
1/2 spoon chili sauce
1/2 teaspoon sugar

Method

Slice onion thin then put it together with garlic into hot mixture of cooking oil and butter. Saute till the aroma is nice
Add chicken and prawn, mix well till weldone
Add rice, salted fish, oyster sauce, carrot and green peas. Stir till dry.
Add tomato sauce, chili sauce and sugar. Mix well
Add scramble egg. Mix awhile.
Can be added with sliced chili, if you like it hotter.

Nasi Goreng Orientale

(Orientale Fried Rice)



Bahan-bahan

1 piring nasi putih
70 gr daging ayam
4 siung bawang putih
4 ekor udang
1 btr telur
2 bh cabai merah
50 gr bawang bombay
50 gr wortel
1 bt daun bawang
garam dan merica halus secukupnya

Cara Membuat

Udang dan daging ayam dipotong-potong. Telur ayam dikocok. Cabai merah dibuang isinya, lalu direbus, ,tiriskan lalu dihaluskan bersama bawang putih (diblender). Bawang bombay, wortel dan daun bawang diris-iris kecil.
Semua bahan ditumis bersama-sama, beri garam, merica dan nasi putih. Kemudian diaduk sampai tercampur, lalu angkat. Pindahkan pada sebuah mangkuk (dicetak), lalu tuang pada sebuah piring.
Sajikan bersama irisan mentimun.

Add salt, pepper and boiled rice, mix well
Place and mold into a bowl then put it onto a dinner plate
